This recipe has been in our family since I was a kid. I believe it came from a magazine via one of my piano teachers.

Yams

  • 2 lb yams, cooked and peeled (I roast them, but you could also boil)
  • 2 tbsp butter, melted
  • 4 tbsp brown sugar
  • 3 tbsp rum
  • ½ tsp salt
  • 2 cans (11 oz ea.) mandarin oranges

Topping

  • 2 tbsp butter, melted
  • 2 tbsp brown sugar
  • 2 tbsp chopped pecans (I prefer them toasted)
  1. Whip yams, 2 tbsp butter, 4 tbsp brown sugar, rum, salt. Fold in most of the mandarin oranges. Turn into greased 2 quart dish.
  2. Combine topping ingredients. Sprinkle on top of yams. Arrange rest of the mandarin oranges on top.
  3. Bake at 375° for 30 minutes.
